I know I don’t post any recipes on my blog, but I made an amazing delicious vegan crunchy and nutty salad that I just had to share. Salads don’t have to be boring! They can be very tasty and a real treat inside your mouth and your tummy.
This recipe can use literally any salad-y vegetables that you have in your fridge. It’s all about mix-and-match.
This salad is divided into three parts: the base, the nuts and the dressing
HOW TO MAKE SALADS LESS BORING
- Combine raw and cooked vegetables
- Add some nuts!
- Toss in sweet and salty flavors
- Switch up the textures
- You need a salad dressing (how-to below!)
What You Need for the Salad:
- Lettuce (I used the cabbages I had)
- Cucumbers
- Green peppers
- Tomatoes (optional)
- Boiled peas (I used leftovers but it’s optional)
SECRET INGREDIENTS FOR THE SALAD:
The Special Ingredient that makes this salad POP: ROASTED NUTS!
I literally had no idea how much this step would elevate my salad to another level!
NUTS I USED: ALMONDS, WALNUTS AND RAISINS
- 10 Almonds
- 5 Walnuts
- 20 Raisins
I lightly roasted the almonds and walnuts and chopped them into small pieces. The raisins can be added whole. Raisins give the salad a punch that transforms it.
HOW TO MAKE THE SALAD DRESSING
Making the salad dressing is my favorite part. That’s because I realized that the dressing can make or break a salad. It’s so exciting, and you never really know how it will turn out. Always good, I promise.
What you Need for the Salad Dressing
- A Food processor
- 2 dates
- 2 tablespoons of olive oil
- ½ a lemon
- ¼ tablespoon of garlic powder
- Salt
- Pepper
- ¼ teaspoon coriander powder (optional)
- ½ teaspoon Dijon mustard (optional)
- 1 tablespoon coconut milk (optional)
- Water (The good thing about this dressing is that you can never go wrong with the amount of water)
Blend all these ingredients in a food processor, and voila! You have an amazing salad dressing. Don’t be afraid to add or subtract any spices that you want to experiment with!
Assembling the Salad
Combine the salad base with the nuts and the salad dressing. Toss everything together and you have your delicious vegan crunchy and nutty salad. I swear the roasted nuts make this salad so tasty!
